Burner Details :

The Garcima 700mm triple ring paella gas burner have been certified by the AGA and have the AGA sticker affixed.  Don't run the risk of cooking in a public space or event without certified equipment.  The gas inspectors do check.

The 3 concentric gas rings in the 700mm burner each has its own finely tuned control, resulting in an even heat distribution across the pan with no hot and cold spots.  Each enamelled gas ring is perforated with hundreds of small openings, resulting in a smooth and even ring of fire which is just not achievable on a gas or electric cooktop.  

The inner rings are used to start the paella cooking the meat and sofrito, or to manage a smaller sized pan giving maximum flexibility.  For large size pans up to 90cm all rings are used, especially in the critical final stages to cook the rice evenly and produce a soccarat.  Not only is the system suitable for paella, but this burner will manage woks, cast iron pans, and any outdoor cooking requirement.  

The burner dismantles to quite a compact size, making it easy to transport to and from location.

Built of heat resistant plastic and metal parts, with enamelled gas rings, this hard wearing burner will provide years of service.

 The burner has been adapted by the manufacturer for Australian fittings and pressures.  Gas Regulator and hose is included with the burner, and it will plug straight into a normal Australian standard gas cylinder.

What about the pan ?

You may be thinking you would prefer an enamelled pan due to the ease of maintenance, but consider how many Spanish paella chefs have you seen cooking off an enamelled pan ?  

There are a few good reasons why Spanish chefs prefer carbon steel :

  • Durability : The biggest advantage of a carbon steel pan over enamelled is durability.  Chuck it in the back of the ute or van, or stand it up on concrete floor it doesnt matter.  The hardy construction and riveted handles make it virtually indestructible.  So often I have seen enamelled pans chipped through the normal rough and tumble of a busy day, not only is the enamel ruined but you then have to repair it, or  care for it as if it is a carbon steel pan..
  • Performance : If you think about it, enamel is an insulator not a conductor.  Enamelled pans are thicker because of the enamel, and the enamel actually acts to prevent heat transfer between the burner and the rice.  The thin steel of a carbon steel pan conducts heat right through to the rice, giving you ultimate control of the cooking environment, and allowing you to produce a perfect crusty soccarat.
  • Authenticity : The base of a carbon steel pan is finely machined with grooves which create a slightly heterogenous cooking surface for the rice.  Each grain of rice has a slightly different heat signature, and cooks slightly differently to its neighbour, resulting in a prized texturing of the rice.  This authenticity is just not possible on an enamelled pan, as the enamel itself fills the grooves in the steel resulting in a homogenous cooking surface and no heat variation across the base of the paella.  Coupled with the insulating effect of the enamel, an enamel pan delivers a very uniform heat to the base of the paella, compromising your ability to produce a texture in the rice.
  • Seasoning : Over time a carbon steel pan will season with use, and a paella maestro will jealously guard their pan,  as it is argued that the seasoning of the steel imparts its own unique flavour to the dish .   

 

Cleaning the carbon steel pan is really quite easy.  The most important thing is to clean it after use with normal dishwashing liquid and sponge, and then to make sure it is completely dry.  A short burst on top of the burner is more than sufficient.  After that a coating of oil wiped on with a paper towel or cloth to coat the surface and prevent oxygen coming in contact with the bare steel, and the pan is good to go.  For extended storage cover in cling wrap after oiling.
