With 4 double riveted trademark red handles, and weighing 18 kilos just by itself, this 90cm paella pan is big enough to cater up to 50 guests. The carbon steel is hardy and durable making these pans great for commercial use where a bit of rough treatment and wear and tear is to be expected.

These pans measure over a meter in diameter including the handles, and measure 90cm rim to rim. They are best suited to a dedicated paella burner, barbecue, or outdoor fire.

The extra 2 handles (total 4 handles) means the pan can be easily carried when full by 2 people. Unlike an enamelled pan the carbon steel in this pan will not chip, delivering reliable performance time after time in a busy commercial environment. Some care is required in keeping the pan dry after use to preserve the finish. These pans are fantastic for commercial or large domestic use when a high capacity paella cook is required to cater a large number of people.

Carbon steel requires slightly more maintenance than enamelled steel or stainless steel, but is the authentic cooking pan for Spanish paella. The pan is slightly convex at the bottom making it suitable for gas hob, open fire, or oven; but not so suitable for induction or flat electric stovetop.

The thin carbon steel pan conducts heat instantaneously to the paella, and the dimpling of the steel base allows texturing of the rice when cooking. The pan is rigid and durable and will last a long time in your kitchen. A real paella maestro will even tell you that the steel itself imparts its own flavour to the bottom of the rice. Care Instructions :

Before Using
To remove the label, heat the pan slightly. It will easily peal off. To properly cure your new pan, bring water to a boil in the pan. Follow this by washing the pan in warm water and mild soap. Immediately dry the pan with a soft cloth. Never allow the pan to air dry. Your pan is now ready for use. Next, rub a small amount of cooking oil on the inside surface of the pan. You are ready to cook. For storage of your pan, after cleaning, rub both the inside and outside of the pan with cooking oil and wrap in paper and store in a plastic bag. Store your pan in a dry place.

Care during use
This product has been designed for use with gas or direct flame. Never place an empty pan on direct heat. Heat your pan slowly and control the heat at all times. If you use your pan in the oven, do not allow it to be exposed to temperatures higher than 250º C or for more than 10 minutes. Never use in microwave ovens. Use only metal or wooden utensils and never plastic. Please note that these types of metal pans reach higher temperatures than normal pans. While is use the entire pan is hot. The pan is intended for use by adults only. Keep the pan away from children at all times.

Care Instructions
Please note that this product is not covered with non stick materials and therefore, food may stick. To clean the pan after use, we recommend soaking the pan in warm water and mild dishwashing soap for one hour, this will loosen any stuck food matter. The pan should be thoroughly cleaned in warm water and mild soap. A scrubbing pad may be used if necessary. Once cleaned, dry the pan immediately with a soft cloth. Never allow the pan to air dry only. Once it is dry it should be rubbed all over with cooking oil or olive oil and wrapped in paper or plastic film. It should be stored in a dry place.

If the pan does oxidise it can be cleaned and brought back to shine with steel wool. Some seasoning of the pan over time is normal, and in Spain it is considered highly regarded.
