How do I make my own Cajun spice mix ?

Make your own Cajun spice mix with our easy recipe !

Cajun spice originated in the 1700’s resulting from the exchange of French and Creole cultures and cooking techniques in Louisiana.

Cajun Spice Mix

Cajun spice is a classic spice mix used in traditional jambalaya and gumbo, as well as making a beautiful seasoning for fish, chicken, or red meats.

An authentic Cajun spice mix uses fresh onion and garlic, however, if you are wanting to mix up a dry spice mix ahead of time you can leave out the onion and garlic, adding them later by blending in a food processer just before use, or, you can substitute onion powder and garlic powder into the dry spice mix.

Once you have made the blend, keep your Cajun spice mix in an airtight container out of direct light to preserve its flavour before use.

To make about 10 tablespoons of spice mix, you will need :

1 tsp black peppercorns

1 tsp cumin seeds

1 tsp white mustard seeds

2 tsp paprika (sweet)

1 tsp chilli powder or cayenne

1 tsp dried oregano

2 tsp dried thyme

1 tsp salt

2 garlic cloves

1 onion, sliced

(note : if you don’t want to use fresh garlic and onion, the garlic cloves and onion can be substituted with 1 tbsp garlic powder, and 1 tbsp onion powder)

Toast the black peppercorns, cumin seeds, and mustard seeds over a dry medium heat until you start to sense the aroma being released and the seeds become dry and brittle. Be careful not to burn the mix. When ready empty the pan of its contents into a large mortar. Grind the spices together with the pestle to form a dry powder.

Add the paprika, chilli, oregano, thyme, and salt to the mix. Using your large pestle and mortar, grind again until a powder has been formed. If you are using powdered onion and garlic, the garlic and onion powder is added to this mix and ground into the powder. It is up to you whether you want to grind to a fine powder for maximum flavour release, or leave it a little bit course and add some interesting texture to your cooking.

If you are using fresh onion and garlic and are planning to use your Cajun spice immediately, then add the dry spice mix to your crushed garlic cloves and finely sliced onion in a blender or food processer. Blend the mixture until the fresh garlic and onion is well combined with the spices.

That’s how easy it is to make a delicious Cajun spice mix that will have your family and friends’ mouths watering. For your own unique twist try adding a pinch of dried coriander, dried basil, or even chilli flakes for a bit of extra zing.
