Get your tastebuds ready for the 1 st International Paella Competition on Sunday 25th May 2014 10am to 4pm at Manly Beach, Sydney, Australia !

12 chefs from across Australia and New Zealand will compete for the coveted title of “Best Paella Chef in Oceania”, and the 3 best chefs in the competition will travel to Spain to compete in the 54 th International Paella Championships to be crowned world champion.

Organised by Miguel Cuervas of “Flavours of Spain”, the 1 st International Paella Competition at Manly is the opening event of Manly Food, Wine, and Sustainability Festival 2014.

Entry is free, the weather forecast is good, and public transport is plenty; so organise the family and come down to Manly Beach on Sunday 25 th May for a great day of Spanish culinary activity.

We were fortunate to be invited by Miguel Cuevas of Flavours of Spain to a sneak preview last week in the form of a paella workshop, cooking class, and tasting held in Sydney City.

The workshop started with a selection of Spanish tapas dishes cooked right in front of us served with a selection of matching Spanish wine. The tapas dishes were coming off so fast it was hard to keep track of how good everything was, but my favourite without a doubt was the melt in your mouth blue cheese and pear tapas.

After tapas was served Miguel fired up the huge paella pan in front of us taking us through his own techniques, learned in Spain and honed to perfection over years of paella cooking, to cook up a seafood paella that looked heavenly and tasted divine.

Not only was the paella visually spectacular, aromatically rich, and deliciously good; but our other senses were invoked to listen for the paella tell you when it has finished cooking, and to feel the complex balance of textures that make up a perfect paella. The prawns, calamari, mussels, and fish came together with the paprika, tomatoes, beans, and saffron to produce a wonderful paella that left everyone craving a bit more.
